Bread Cutlet

Ingredients:
White Bread slices : 4
Big Potatoes : 2
Medium Onion : 1
Green Chilli : 1
Red Chilli Powder : 1/2tsp
Coriander Leaves : 2tsp ( Finely Chopped )
Salt to taste
Green Peas : 1/2 Cup ( Boiled )
Garam Masala : 1/2tsp
Bread Crumps : 1 Cup
Oil for Deep fry
Water - 1 Cup

Preparation:
-> Boil potatoes and mash them and add salt, garam masala powder
-> Take a kadai and add 2tsp oil and add green chilli, finely chopped onion, coriender, green peas, mashed potato, red chilli powder and cook for 10min
-> Take it in a bowl and cool it
-> Take a bread slice and dip it in water and squeeze a little and place it in your plam and take 1 to 1 1/2tsp of potato mixture and roll it like balls
-> Now roll them in bread crumps
-> Deep fry the rolls till they turn to golden brown colour.
Serve Hot with Tomato Ketchup / Green chutney

Palak Pakoda

Ingredients:
Oil for Deep fry
Chat Masala :1/4tsp
For Batter:
Besan: 2tbsp
Aata : 2tbsp
Bhatua: 1 cup ( Finley Chopped )
Palak : 1/2cup ( Finley Chopped )
Grated Paneer: 1/4cup
Milk: 2tbsp
Green chilli : 1 ( Finley Chopped )
Ginger Garlic Paste : 1/2tsp
Black pepper Powder : 1/4tsp
Oil : 1tbsp
-> Take a big bowl and add all ingredients and mix well and make a little bit thick consistency without lumps and  keep aside
Preparation:
-> Heat oil in a kadai and 1 spoon full of of batter and fry it till they turn light brown colour
-> Take them in a plate and sprinkle chat masala

Stuffed Spinach Pakoda

Ingredients:
Large Palak Leaves :10
Oil for deep fry
For Stuffing:
Paneer : 200gms
Hung Curd: 1tsp
Ginger Garlic Paste : 1tsp
Green chilli paste : 1tsp
Chilli powder : 1tsp
Salt to taste
-> Cut paneer into 10equal rectangular portions
-> Take a bowl and add other stuffing ingredients and mix well
-> Finally add paneer and mix well and let it be for 45min
For Batter:
Maida: 1/4cup
Corn Flour : 2tsp
Rice Flour : 2tsp
Vaamu : 1/4tsp
Salt to taste
Water: 1/4cup
-> Take a bowl and add all ingredients and mix well so that there will be no lumps
Preparation:
-> Take a spinach leaf and add one paneer and close the both sides to middle and roll it
-> Dip it in a batter and deep fry them till it turns to light brown colour

Serve Hot

Methi Paneer Pakoda

Ingredients:
Methi Leaves : 1 1/4 Cup
Hot Oil : 2 tsp
Haldi : 1/4 Tsp
Besan : 1Cup
Green chilly : 1tsp ( Finley Chopped )
Salt to taste
Stuffing:
Grated Paneer : 3/4 Cup
Green Chilly : 1tsp ( Finely Chopped )
Salt to taste
Preparation:
-> Take a big bowl and add 1 Cup Methi leaves + Besan + Salt + Oil + Haldi +Green chilly + 1 Cup of water and mix well with no lumps
-> Cook it on a high flame for 2-3min stiring continuously till the mixture comes together
-> Now take it in a bowl and let it cool
->  Now add rest of the Methi leaves and mix well
-> Now prepare balls and spread it a little
-> Now place 1tsp of paneer stuffing in it and make ball again
-> Prepare all the balls as above and deep fry them till it becomes golden brown

Dahi Baingan Kashmiri Style

Ingredients:
Brinjals : 4 ( Big one )
Dahi : 2 Cups
Saunf : 1/2 Tsp
Hing : 1/4Tsp
Haldi : 1/4Tsp
Red Chilli Powder : 2Tsp
Ginger : 1Tsp ( Finely Chopped )
Cardamom : 3
Oil : 2Tsp
Salt to taste
Oil for deep fry
Coriander : 2Tsp ( Finley Chopped )

Preparation:
-> Take Brinjals and make thick round slices and deep fry them
-> Place them on a tissue paper
-> Take a handi and add oil and add cardamom, saunf, haldi, ginger and hing and fry it
-> Add Dahi and mix well ( Dahi should whisked so that it becomes smooth )
-> Add red chilli powder, salt and mix well
-> Cook for 5 - 8min
-> Add fried brinjal rounds and cook for another 5 - 10min
-> Finally add coriander leaves and mix well.

Serve Hot

Stuffed Paneer Masala


300 gms paneer ( cut into 2-inch-in rectangular shape )

Filling ingredients: 
Garam masasla : ¼ Tsp
Aamchur powder : 1/2 Tsp
Jeera powder  : 1/2  Tsp
Hing : 1/4 Tsp

Coating batter ingredients:
Maida : 1/4 Cup
Corn Flour : 1/4 Cup
Haldi : 1/4 Tsp
Salt to taste
Water : 1/2 Cup
Ghee/oil for deep frying
Gravy Ingredients:
Oil : 3Tsp
Cumin Seeds :1 Tsp
Cinnamon :  1 inch
Bay Leaves : 2
Cloves : 2
Cardamom : 2
Haldi : 2 pinches
Ginger: 2 Tsp  ( Finely Chopped )
Green Chillies : 2 ( Finely Chopped )
Kaaju: 2 Tsp
Dhaniya Powder : 1/2 Tsp
Haldi : 1/4 Tsp
Tomatoes  : 3 ( Finley Chopped )
Salt to taste
Sugar : 1/2tsp
Kasoori methi : 1/4tsp
Coriander Leaves : 3tsp ( Finley Chopped )
Milk : 1Cup
Cream: 1/2 cup
Preparation:
-> Take a bowl and add all filling ingredients and mix well.
-> Now take Paneer long cubes and slit it
-> Take the filling and stuff it in the paneer cubes and gently press the open ends to close it
-> Take another bowl and add all Batter ingredients and mix well
-> Heat oil in a kadai
-> Take the stuffed paneer and dip it in the batter and deep fry it till it turns to golden brown colour.
-> Place them in a tissue paper
-> Take a handi and add 2tsp ghee/oil
-> Add Jeera, cardamom, cloves, bay leaf, hing, cinnamon and fry it
-> Add ginger, green chillies & kaaju and fry it
-> Add tomatoes and other left spice powders and mix well
-> Add salt and sugar and mix well
-> Let it cook well till oil oozes out
-> Now take it in a bowl and cool it and then grind to fine paste
->  Now add 1 Tsp oil/ghee in the handi and add the above grind paste and let it cook for 10min in low flame
-> Add kasoorimethi + Fried paneer + chopped coriander leaves and mix well
-> Cook for 5 - 10min more
-> Now add Milk and mix well
->  Add Cream and mix well
-> Cook for 5min more

Serve Hot

Chickpeas Veg Burger

Ingredients for Patties:
Soaked & Boiled Chickpeas : 2 cups
Eggs : 4
Salt to taste
5tsp finely chopped coriander
Onion : 1 finely chopped
Lemon Zest : 1/4 tsp
Wheat Bread Crumps : 1Cup ( Roasted )
Sprouts: 1/4cup ( Pesalu / Senagalu / anything )
Green chillies : 1 ( finely chopped )
Oil : 1tsp
Preparation:
-> Take a mixer jar and add chickpeas + Eggs + Salt & make fine puree ( don't add water )
-> Take it into a big bowl and add onions + lemon zest + chopped coriander + Sprouts + Green chillies & mix well
-> Add bread crumps and mix well
-> place a wet cloth on the dough & rest it for 10-20min
-> Take a big dough and prepare like patties
-> Take a pan and add little bit oil and shallow fry the patties both the sides and keep it on a tissue paper.

Ingredients for Burger Preparation:
Round Buns : 4 ( Cut them to half and shallow fry inner side )
Tomatoes: 1 ( Cut to round Slices )
Onion: 1 ( Cut to round Slices )
Keera : 1( Cut to round Slices )
Preparation:
-> Take a Bun and open the top now place the Pattie and add each round slice of Tomato + Onion + Keera and close again.

Creamy Moong Dal w/ Spinach

Ingredients:
Moong dal (without skins ) - 2/3 cup
Spinach - 150 gms ( Chopped )
Water – 5 ½ cups or 1.3 liters
Haldi - 1/4 tsp
Dhaniya Powder - ½ table spoon
Scraped, finely shredded fresh ginger root - ½ tsp
Ghee - 2 table spoons
Salt to taste
Jeera -1 tsp
Hing - ¼ tsp
Lemon juice - ½ tsp
Garlic: 2 pieces finely chopped
Rai : 2 pinches
Curry Leaves - 5-6
Preparation:
-> Take a pressure cooker and add Ghee + Moong Dal + Water + Haldi + Ginger roots + Coriander and cook for 20- 25min or until 5-6whistles come up
-> Remove lid and add salt and mix well
-> Make the cooked dal to fine paste pressing it with steel laddle
-> Now add chopped Spinach and cook for 5min more
-> Now add below mentioned tadka in the dal and close the lid and let it be for 2 min
-> Before serving add lemon juice


Note: Tadka:
-> Take a tadka pan and add 1tsp ghee and add Jeera and fry it
-> Add hing, 1 dried red chilly, Rai & 5 - 6 curry leaves and fry it

Matar Paneer

Ingredients:
Green Peas : 1cup
Paneer : 1/2cup (1 inc Cubed and fried to light brown colour adding 1st of ghee)
Onion: 2 finely chopped
Tomatoes : 2 finely chopped
Ginger Garlic Paste : 1/2tsp
Oil : 2tsp
Green Chillies : 3 finely chopped
Garam Masala Powder : 1/2 tsp
Salt to taste
Coriander : 1tsp finely chopped

Preparation:
Paste: Take mixer jar and add chopped Onion + Tomatoes + green chillies and grind to fine paste
-> Take a kadai and add oil
-> Add the above grind paste and cook it
-> Add salt & garam masala powder and mix well
-> Add 2 cups of water and cook for 10min
-> Add boiled green peas and cook for 5min more
-> Add cubed &  fried paneer and cook for 3min more
 -> Garnish with finely chopped coriander
